Margherita pizza
There is an unspoken rule in hospitality around warning customers about wait times. Some may even call it a duty. An imperative. A mandate. When we walked in and saw two large tables and the rest of the restaurant empty, we weren’t concerned. We saw they had some food and figured we were in the clear. This was reinforced by the waitress saying flat zero about any extended waits.
When we saw more food coming out of the kitchen we thought ooh, this could be for us. But wait, that’s two pizzas. Going to the other table. Then a break. Then two more pizzas. Then a break. And so forth.
Over forty-five minutes we waited. And yes, the blow was softened by their reasonably priced cocktails. But nonetheless, a dereliction of duty has occurred here. Not everybody has 45+ minutes up their sleeve on a Saturday afternoon. At one point, well into the wait, the server said “yours is out next”. It wasn’t. And it wasn’t the food after that either. Did she mean yours is the next table? That’s bloody cheeky phrasing when there’s only three tables here and two have 10+ people.
When the food finally did arrive, one was worth the wait and one wasn’t. The burger was joyful. Structural integrity on point, you could put this thing down and pick it up to your hearts content. The perfect level of spice, crispy hot chicken, just the right amount of salad, and the pickled onion was a nice touch. The margherita pizza wasn’t bad, but it was floppy, over-cheesed, and the crust was chewy.
