Pancakes with maple syrup, strawberry and cream
Vegetable focaccia

On a sunny December 27th, Windermere Berry Farm is exactly as packed as you would expect. Despite this, everything came out really fast. The vegetable focaccia was bloody good, and that is far from a given. Many veg sandwiches are thoughtless throwaways with mismatched innards, but this focaccia had been given some thought. The caramelised onion, pesto, mushroom and spinach all worked together perfectly and we would be happy to enjoy it again anytime.

Same goes for the pancakes. They were big and fluffy with tonnes of strawberries. Really, really good strawberries too. Sometimes places use their D-grade fruit in settings like this, but these strawberries could happily be eaten alone. Our only complaint would be that there wasn’t enough syrup - fluffy pancakes are like a sponge so you really need to drench them in the maple.
